I agree about Audacity. It is a good tool, and I use it a lot.
The only problem I encounter with it, is it won't work with JACK running.
If you need to record audio with JACK running, try Rosegarden, but you
will need to clean-up your experimental recording tracks manually, using
the "Manage Audio Files" tool of the File menu, and then you can delete
the actual unused files (in your file browser, in the rosegarden folder).
