You can run 2003 SBS server which ships with exchange,  or run 2008 SBS
server , though main requirements are 4GB of RAM and above 60GB of Hard
disk space,  you can run your PDC/AD on this, internal DNS and also has
share point 2 but installing sharepoint 7 should have you flying well, you
can install a wiki type interface for your internal documents and possibly
do some kind of version control if you explore more , runs pretty solid
once setup.
