Until yesterday I was running an (unofficial) copy of Windows 7 on my old 
desktop pc. 
It worked fine - good speed etc. -. the desktop has 1 Mb Ram and the processor 
is 4-5 years old!!

This might have been due to it trying to download updates. Did the machine have 
an Internet connection? I find it's better to install Ubuntu offline, then 
update after.

This does not sound normal especially with 1Gb of RAM. You need to check the 
processor list and see what is using 80-100% of your CPU. 
System--->Administration------->System Monitor.

 Also odd, is your PC a whitebox? Or a brandname like a DELL, HP etc.

https://help.ubuntu.com/10.04/printing/C/scanning.html Try following this Wiki. 
Otherwise it does appear your scanner is supported in the latest version of 
SANE but requires you to compile the source code. http://www.sane.org

Can you try plugging the drive in then goto 
Applications---->Accessories---->Terminal and type sudo dmesg at the terminal.

Finally I would like to remove the Ubuntu I have installed on my laptop side by 
side with Windows 7 (this is a legitimate copy)
