If your backup needs are simple (copying/mirroring files/directories on a cron-job) then have a look at rdiff-backup. It's quite an amazing piece of software that works exactly as advertised:

Regarding the VM's: I've not used VMware ESX, but you may need to coordinate snapshot backups of your VM's in ESX with whichever back-end backup process you end up going with. Alternatively, you could go the extra mile and set up LVM partitions or use a file system like ZFS to do snapshot backups that way:
