Dear all,
I've been experiencing this minor, but rather visible issue of
truncated cross-reference insets in the editor area.

Try the attached example. The labels are displayed at full length
(e.g. "tab:asdf-some-long-label-that-sometimes-is-needed-A"). But the
cross-references aren't; instead they're truncated at "Ref:
tab:asdf-some-lo...".

In my documents I deal with a number of longish labels that are mostly
very similar when truncated. Personally I find that dealing with a
dozen "Ref: tab:asdf-some-lo..." lookalikes in the editing area is
distracting, and counter-productive. I always need to hover the inset,
wait for the tooltip to appear, and only then be able to check that
the cross-ref points to the correct table.

Is this inset truncation mechanism hardcoded, or can this be configured away?

It's hardcoded. I suppose it could be made configurable.
