Remember, these are bitmap images. They are generated once and then stored in 
a cache that uses the latex string as the identifier. So, if you change your 
zoom having generated the images, then they won't be changed.

Having said that, the image generation should respect the zoom. Line 313 of 
src/graphics/PreviewLoader.C is:
        font_scaling_factor_ = 0.01 * lyxrc.dpi * lyxrc.zoom *
                lyxrc.preview_scale_factor;

The idea is that these previews are exactly the same size as the surrounding 
text. So, change your zoom, close the document and open it again. You could 
also try changing the preview_scale_factor (default value of 0.9).

Add a line to your preferences file:

\preview_scale_factor 2.0
