Insert the date from the menu, then instead of typing anything
insert a hidden blank (<Ctrl>Space).

Actually the documentation is quite good for examples on how to use LyX. 
Others than that, it is my impression that you can always ask here 
if you need something specific like a certain letter style or AMS paper.
