It depends. >;-> On the output medium, the output process, the specific application... If you can afford it, Sabon (Next) has an excellent reputation as book font. And Syntax (Next) is generally considered the sans-serif counterpart to Sabon. Among the free fonts available for LaTeX, Garamond is probably the one with the best reputation for readability.
