Steve,

All I have available at the moment is LyX 2beta2 for Mac, but in 
LyX-->preferences--->Output--->General, I have an option "Output line length 
___".  (the default is 65--close to what you estimated)  This seems to do what 
you want, as I've been able use it to change the plain text output from 35 to 
90.  The nice thing is it requires no fiddling with the actual LyX document 
margins, etc.
