Bryan gave a good summary of sources for the iPod Touch iOS 5 User Guide from 
the Apple help site and iBooks.  You should have been able to download the PDF 
file by focusing on the link in the web page and pressing Option+Return.  
However, if you want to access copies of the User Guide in HTML format, here 
are the links for the iPod Touch, iPhone, and iPad iOS 5 User Guides:

For users wanting other languages, replace the two-letter language code at the 
end (e.g., "en" for English) with the combination for the language you want.

"da" for Danish
"fi" for Finnish
"pt" for Portuguese

When I was first learning my way around VoiceOver gestures for the 3rd 
generation iPod Touch, I found it very helpful to put an icon link to the 
section of the guide dealing with "Accessibilty" or "VoiceOver" onto my home 
screen. Once you have opened the guide in Safari on your iPhone or iPod Touch 
and navigated through the links to a section you want quick access to, such as 
"VoiceOver Gestures" or just the "VoiceOver" section under "Accessibility", 
double tap the "Utilities" button at the bottom of your screen, just above the 
"Home" button. Double tap either the "Add Bookmark" button to add the guide as 
a bookmark to Safari, or double tap the "Add to Home Screen" button if you want 
to add an icon to access the user guide from your home screen.  A similar 
process works for the iPad, except that the "Utility" button is found at the 
top of the Safari Screen, just before the Address field for Safari.
