These were produced when the iPad 1 came out, so they won't cover the new features specific to iOS 5, but they'll help with the orientation. Another thing is that you can check is the Apple Web Accessibility site for the iPad:
http://www.apple.com/accessibility/ipad/vision.html

That includes the link to the accessible HTML version of the iPad user guide:
http://help.apple.com/ipad/5/voiceover/en/

That guide also appears as a bookmark in the version of Safari loaded on your device, or you can follow the instructions I posted about a week ago on how to save a fast access link to a particular section of the guide as an icon on your home screen for easy access.

I use the secondary Mail Archive for this list to search for recent posts. Go to the web page at:
http://www.mail-archive.com/mac-access@mac-access.net
If you type a search into text box like:
from: Esther iPad user guide
and press return, you'll find a Google like list of links to matching posts that I made on the subject, sorted by relevancy. You can also just type in "iPad user guide" and press return, but in this case, since I know I wrote a post on the subject, adding the argument "from:" (i.e., the word "from" followed by a colon, and then the name of the poster), will narrow the search results.

Here's the top matching web page link when I typed in "iPad User Guide"
