Hello James, Jac OS X is more meant for studio setups or in those cases where you need multiple inputs and outputs through aggregate devices or other methods. While I think Soundflower has similar capabilities, Soundflower needs to be accessed via the status bar which VoiceOver is unable to do with third-party icons.
So, if you need to do more than what you're doing now, I'd switch to Jac OS X.
