Hi! It probably comes down to Apple licensing the books and getting permission. This also applies to movies. We recently got a reopened iTunes film store with only American titles, and a movie which does have the Danish language for audio was only available in English. This seems to apply to all of those I've looked at, though subtitles are supported.
I find this incredibly peculiar, given that it'd save Apple a lot less hastle having to get it licensed for a second time to provide the languages. The fact that these are movies that you can walk into any store and pick up makes this even stranger. Whether it's Apple still needing to sign, or the Danish law being restrictive, it's probably hard to say. Apple has plenty of music in Danish available, though iTunes Match doesn't worry me that much in this case.
