Hello Trevor, I don't know of any shortcut to find out the version of an application. However, once in the application, you go to the application menu and down to About application name. Press Return and you'll hear it's version.
As for being told too much information, open VoiceOver Utility and go to Verbosity. Select the fifth tab, Hints, and uncheck the check box "Speak instructions for using the item in the VoiceOver cursor".
