Hello Paula

This is a subject which comes up very frequently. In the list archives you
would find a lot of questions and answers on this subject. However, let me try
to sum up what I believe to be the current situation.

with preview, but it is fiddly. I want to be able to highlight text and
copy it into a pages file as quotes for my assignment.

If your PDF documents are just text and not encrypted, you can have preview
work very effectively for you. However, you might be better off using Skim.
Skim does offer some degrees of control which Preview and VoiceOver do not.
For your reference, you can find Skin at the Skim download page:

Again, this is extensively covered in the list archives. We encourage members
to look in the archives when dealing with what they think might be commonly
asked questions. Actually, on that subject, Gordon is going to compile a page
for our website regarding commonly asked questions. We think that may help
recent converts to Mac OS or iOS.
