Hi Amy, It took me a while to find this, since this isn't something I use to change the visual appearance of my iBooks. When you're reading a book, flick right from the "library" button in the top left corner to the "appearance" button and double tap. That menu lets use adjust brightness and font size. Flick through past fonts to "Themes" and double tap. You can adjust brightness, page color, and at the bottom of the menu are options for "Book" and "Scroll". "Book" is the default selection, and I've never changed this. I also had difficulty getting out of this menu with VoiceOver on. I had to triple click home and tap the screen, and then triple click home again.
Maybe there's an easier way. HTH.
