I certainly would not underestimate the learning curve. I have had my iMac
for well over a year and whilst I am still learning I am not yet as
proficient as I am on a windows machine. For example I still find iTunes a
confusing nightmare to handle and as soon as I start to get to grips with it
changes again. VLC is much easier though. 
I think out of the uses you mention mail is the most straightforward . Some
aspects of Mail are more intuitive and straightforward, especially with
attaching files but you will need, even with Mail, to get your head around
the concepts of interaction and uninteraction if you are to get anywhere
with managing or reading the headers in an email message.
 There is, in my view,  a definite learning curve with browsing the web on
Safari and you should not just expect easy replication of existing windows
skills. Bookmark management is done completely differently as is managing
the download of files. Selecting and copying text, whilst possible is less
straightforward than on a Windows machine. As against that if you can find
reader pages Safari can provide a far smoother reading experience and once
learnt is far easier than ploughing through unnecessary garbage on a page.

The OS is, in my view,, superior to Windows  but again represents a learning
curve as things are done differently.  Here again interaction is a necessary
skill though increasingly the use of the tab key to automatically interact
and interact will help make things less confusing.

In short I would discourage any impression that there is a quick process
where e a person can pick up all the necessary Mac skills in a couple of
days.
There is also, as discussed on this list earlier this year a dearth of
information aimed specifically at the Visually Impaired user. There are lots
of introductions to Voiceover and the David Woodbridge podcasts are probably
the best of the podcast resources but there is not the depth of material for
example for Office based applications like Pages, Keynote, Numbers or
Tables.
