Spaces and brackets don't work. As for your e-mail, that is required, but that being said, you can choose to not show it in your profile.

Yes, these will be seen on your profile, you don't need to put a mobile phone number if you don't want to. Secondly, yes, if you create the account on your phone, you will just need to login on the Mac side.
