Okay, I've finally found where the "Define" button for iDatabase for Mac is, 
there's a Toolbar at the top of the screen which contains what Voiceover 
describes as "Image", there are 3 of these and then a search text field.

The first one brings up an info panel on the currently open database if 
clicked, not sure what the second does but the third is the "Define" button 
where you define your fields for your database.

I'll have another look tomorrow to see if I can sort out how it all works but 
in the meantime - if you want to have a fiddle - perhaps you could create a new 
database with one of the pre defined templates, press the "Define" image in the 
toolbar and see how the structure is laid out? That's pretty much what I'll be 
doing when I next have a play with iDatabase For Mac.

I loaded one of the pre defined templates - CD Collection - and attempted to 
add a record which turned out to be easier than I thought though I didn't have 
the pictures of the album covers at my disposal at the time, I certainly had no 
trouble entering the required data into the appropriate edit fields.
