As you've seen, Bluetooth headsets abound! so I would take some time and go to 
a place like an electronics shop or phone reseller who may have stock of these 
items, take your IOS device along so you can try each headset in mind.

There are some things I'd look out for, make sure the headset you purchase is 
at least Bluetooth 3.0 compatible which makes a huge difference of the clarity 
of what you'll hear and other people may hear if you're using it for phone 
calls, also means that the headset will be compatible with Siri.

Also stick to the know brands if possible, for example its known that Senheiser 
and B&W make excellent headsets and probably always will.
