Well i only recently, as of before christmas. Got myself this B/W G3 350. I've install a Mac edition Radeon 32mb PCI card and a Sonnet Encore G4 500mhz. And the things fantastic!
Much better then my aging Powermac 8500. I'd upgraded that to a G3 333mhz. Was a decent system, but crashed way too much for my liking. Since the new machine, i've not looked back.
The Mac mini is nice, but for someone like me. I'd never be happy with it. I like upgrading my machines too much. Customizing them to your own personal needs :-)

I would personally stick with the B/W as the Mac mini isn't as good. Alright it has reasonable spec's at the moment, but no where near as expandable as a PowerMac. It would be like buying a laptop, give it a year and the thing will be outdated. At least with a B/W there's the possibility of upgrades.

You have to be careful with the upgradeability argument. The mac mini is so cheap that it is quite likely that replacing one with a similarly priced model when it becomes out of date is going to be way more efficient than paying for the upgrades. For instance, the cost of a 1.25GHz CPU card and a replacement graphics card for a Cube is actually greater than the cost of a new Mac mini. If you factor in the second hand value of your old system then it is frequently not worth the bother.
Of course, this ignores the entertainment value of upgrading an old system....
