FYI, such solution already exists.

1) download the archive from here :

2) unzip it
3) put OpenOffice.org 2.3 folder into /Applications
4) In this folder, are all icons (ready to be docked )
=> put the OpenOffice.org 2.3.app icon ( after mounting the .dmg ) is
the Office folder (inside)
Dock whatever icon ( Writer, Base .. etc)
...and use it :-)
It's really annoying to have one OOo icon and then have to select which program to open after already opening OOo.
The correct solution is one application asking you the choice in case of
empty document to be open.
One application -> 6 (or maybe more) possibilities
Here, provide 6 icons launching all the same application is imho a
design mistake, but can be prefered.
And if the user ask for it, then, we can provide a solution :-)
Maybe both methods could be worked in.
No idea of the feasability. I know discussion about the design started
sometimes ago, but no feedback yet.
