Click on the Mailboxes icon (should be in the icon bar in the middle).
Click once on the mailbox you want to use. Quit Mail. Restart Mail and
it (the one you clicked on) should be the default mailbox.

p.s. You don't have to quit right away. Any mail box that you have
chosen when you quit will be the one that Mail chooses when you start
up again.
