I use emacs all the time for editing LaTeX docs and programming stats 
packages.

Unfortunately, I can't help you with gnus or mail, 'cuz I use it for 
editing locally and remote (with no problems) only.

Are you using the installed version? If so, you might want to check at

http://members.shaw.ca/akochoi-emacs/

as this is the Mac OS X maintainer's website.

Dunno if it offers anything more than the installed version.
