Harry, it's on the Info tab toward the bottom under "Other."

That said, it's not real convenient. You have to plug the iPad into the 
computer to sync your notes. Now that's not very Apple-like, is it?

I use Evernote on my iPhone, iPad and, yes, I still use my Mac once in a while.

With Evernote you can save text and audio notes on any of the above devices 
(and web pages and files on the Mac) and then they sync "over the cloud" to the 
other devices. I can take notes on the iPad at a client's office and when I sit 
down at my desk to write up a proposal, they are all right there on the Mac 
where I can view them in an adjacent window. Same for notes on the iPhone. They 
sync within seconds, so I can record audio or type a quick note and it's almost 
immediately everywhere else.

I love it and am using it more and more. 

I am also testing SoundPaper on the iPad which allows you to take audio and 
type notes at the same time. A nice feature is that it tracks when you entered 
text, so that it can play the audio associated with a particular piece of text, 
in case you didn't get down every drop of your boss' wisdom, say. ::-)

Another thing I use across all platforms is ToodleDo. It is popular with the 
"Getting Things Done" crowd in that it tracks your to do list by category, 
keywords, priority, project and "context." A context can be likened to a 
location. You do certain of your to do's around the house, running errands, at 
your desk, at the office, in the car, etc. Setting a context for you to do 
items allows you to group them by where you are. So when you look at your 
errand items, you don't have to wade through stuff you can only take care of in 
the back yard or at your desk. Pretty handy. 

It has great versions for the iPhone and iPad, as well as a web app you can use 
anywhere. As with Evernote, it syncs everywhere from every device almost 
instantly. For a lot of what I do now I don't have to hook my iPad back up to 
my computer. 

It's all "in the cloud" these days, Harry!
