Can a HP 1600C printer be configured to work on a Mac Network or must it be a HP 1600CM printer?

HP's spec's indicate that the 1600C has only a parallel printer port and no postscript capability. If both of those defects are corrected, and they can be by add-on accessories, then it can be used on an all mac network. If you add the postscript, and connect it to a PC on the mac network, OSX macs can use it.
