No interest in using LibreOffice? I use it on Mac, Windows and Linux, and it
is a practical alternative (for me) to Visio.

LibreOffice Draw should get you going fast for simple flowcharting. The only
drawback is that you need to define a page size to draw on.

Alternatively, I have used graphviz in the past, but the documentation is
sometimes difficult to work through.
