I find FTP works well to share files with older systems. QuickFTP is a free FTP server you can get from the Mac App Store and run on your modern Mac. You can connect to it from your old system using its web browser, a dedicated  FTP client like Interarchy or Fetch, or even the Finder.

I had a similar need not that long ago and used copyparty https://github.com/9001/copyparty on the modern mac to access files from the old PPC mac. I admit the PPPC Mac was a real Mac not an emulation on the modern mac but that should make no difference.

Copyparty worked out of the box for this but you migh prefer to configure it to suit your needs as you would need it on a more regular base than me  just rescuing some files.

At least in Germany QuickFTP is no longer free.
