By disassembling some OS X kernel extensions (AppleSMC, AppleSMCLMU, SMCMotion Sensor), using "otool -tvV" IIRC. Also, OS X provides a great external debugger, you can debug the kernel from another computer (even running Linux, there are some tutorials on the web about it IIRC), you put some breakpoints at some places, see what happens... I also used external sources like the open-source smcFanControl tool... That's it!
