Hello, Under Snow Leopard in the Dock, once you land on the icon of the application you wish to change features for, press vo+shift+m and the menu will open for you. You will hear a characteristic sound. The menu has somewhat changed in that you get "open submenu" and then you need to expand it with arrow key and there you have yur usual options.
