Never mind, I figured out how to deal with the Outlook calendar invitations. 

In case anyone receives one, here's what I did. 

1. Interact with the text in the mail message.
2. There will be an attachment in there. Use VO space to select it. A menu will 
appear. 
3. Choose Open attachment, only if you know who it's from and all that of 
course.
4. It will open in Calendar. Move to the current date and interact with it.
5. Choose Grid from the list and interact with it.
6. I knew the day when the appointment was so I arrowed down to that date and 
saw 1 item there. There's probably an easier way to do this.
7. I then interacted with the day and a group of buttons came up with choices 
to accept the appointment, etc. It also notified me that the appointment needed 
some action taken. 
8. I hit enter on Accept and Voila! 

Now I'm sure there is an easier way to handle these kind of appointments and 
I'd love to hear it, especially for when you don't know the date in advance or 
you want to add things like reminders to the appointment.
