You'll want to use cmd-option-f, not cmd-f. If you do, as you type, you'll get 
a list of possibilities. For instance, if you type "test", a menu appears with 
options for mail whose subjects contain "test", or whose bodies contain the 
word. If you type a name, you'll get contact matches instead; left arrow to the 
start of the embedded text once you choose one, then vo-space, and you can pick 
"from" or "to". Once you play with the search field for a bit it makes sense, 
but it's unlike anything else on the Mac I've ever run into, so it takes 
getting used to.

In OS X 10.11, Apple promises you'll be able to search Spotlight for things 
like "mail sent to [some name] last Friday", so searches will get far easier. 
Hopefully that feature works as advertised, because even on a good day, Mail's 
search field can sometimes be noting but frustrating.
