Hi,
You could try the following. I would plug your iOS device in to iTunes and use 
quickTime player to get the audio. Start a new audio recording, and when you 
are placed in the window, click on the menu and select the name of your device, 
then press the button labeled full volume. You should now here your devices 
audio coming from the mac, if you interact with voiceover. Just find a way to 
record that sound. If I were you, I would just use the built in start recording 
button. This way, you will not have to get in to custom solutions. If you have
