Well, UNICODE 2122 is apparently the minus sign. Not only is there a minus sign but a special one for making negative numbers as opposed to positive numbers. There is some way in the international or keyboard settings to input UNICODE minus as option held down while typing 2212. Also, if you go into edit->emotes and symbols (command-control-space on my system), you can search for minus. There are actually UNICODE symbols for all of the recycle categories too!
