Interesting, reading Eric's message I would be more tempted to use the Microsoft products. I regularly though not intensely use Microsoft on Windows and MacOS and also occasionally bring up Pages. Some of your decision needs to be based on how much you need to collaborate with others and how complex your documents need to be.
Both Pages and Word provide support for Styles which you should use to ensure consistent layouts. Eric did mention a philosophy difference between Pages and Word that might be useful to think about. Essentially, word is very article centric, so it is good at creating a single story, but if you wanted to create a newspaper or magazine it would be difficult at best. Pages tries to be able to handle the layouts of complex documents more cohesively though that would be difficult for a blind person to do. I believe the Word philosophy is to make publishers use Adobe InDesign or Microsoft Publisher to combine multiple articles into a publication or web page, but then Word gets too complex if you are going to use a finishing tool like Publisher or InDesign, and one might be better off using textedit or Ulysses. Though I have not tried Ulysses it probably would be a great writing tool for the low vision community.
