QuickSilver, the application that Yvonne described in her blog at:

supports this capability, but as I believe she mentioned in her posts, you may not be able to get all of this working in Snow Leopard. What I've been using instead of the clipboard with some of the same functionality that you want is a free software application called JustNotes (in its beta release) that synchronizes notes with an iPhone/ iPod Touch app called Simplenote ($1.99). This also automatically puts the notes up on my iPod Touch within the Simplenote app, and lets me access current, updated versions of the notes through the free Simplenote secure web interface. This is also a great way of getting content up to my iPod Touch (if I want to cut and paste in any of the text I loaded up as notes). (As an aside, the Simplenote app also lets me use another iPhone app called TextExpander (normally $4.99, but currently $1.99). This app lets me customize "snippets" that minimize my typing, and that can automatically expand to the currently formatted date, etc.).

Note: I installed JustNotes because I already had Simplenote. If you install JustNotes first and later decide to get Simplenote I'm not sure whether the automatic synchronization will work correctly without some fiddling. Simplenote gives you free access to a Simplenote secure web account that lets you sync notes in the web account immediately with your notes on the iPhone/iPod Touch. JustNotes has you enter this when your set it up, since the application for the Mac desktop was inspired by the way that Simplenote works with the web account. The small, floating JustNotes window currently shows up in the window chooser menu for Finder (VO-F2 twice) as "untitled". If you're using DropBox, this means that you might see two windows labelled "untitled".
