Hi, The "Hide a Book" item should be an expandable element. That is, pressing on it should expand and give you the instructions. Sierra shouldn't make any difference. Basically, do the following:
1. Open iBooks. 2. Up to the Store menu. 3. Down to View my Account. 4. Enter your Apple ID password 5. Press on the Features tab. 6. Use the Item Chooser to find the Purchased link. In this area, you should be able to find the book or books that you wish to hide. 7. Interact with the book title. 8. Navigate to hear "Hide" and something else that I can't recall. 9. Interact with the "hide" area and press the Hide button. HTH. Later...
