Sorry, not running with HS here at work, but with EC but there is a menu available either right after the DELETE / REPLY / Reply All / Forward or else as the very last item in the Header section of the e-mail message. It is a button menu with the name as the number of attachments in the mail message.
Also, at least in 10.3 and earlier, attached documents that are in mail messages were stored in ~/Library/Mail Downloads now when I look through ~/Library/Mail/v3 there is a folder for each mail account with a folderName.mobx folder under that folder and then a folder with each message inside of that which does have downloaded attachments in it. Though I would expect that only pdf and inline graphics would be in that folder by default and that other attachments might be only stored on the server until requested.
