Hi, Not sure what's going on here for you. I am able to edit the Media Kind on purchased songs, iTunes Matched songs, AAC unmatched songs as well as mp3 titles. Logically, this shouldn't be an issue as what is really happening is that you are simply changing the info within your personal iTunes database. Do you use Apple Music or iTunes Match, or just a regular iTunes library?
