Hi Matt I think the reason that you are having trouble with copying to your external HD is that the drive is formatted in HTFS. This is a Microsoft format that Mac can read but cannot write to.
As for your second issue with icon view there is a simple way to solve this. When you have your desired view set press Control + J. Here you can set Finder's default viewing options.
