Hello.  Do you mean that when you open an .rtf or .doc file, you want them to 
open in TextEdit?  If so do the following:
1. Put your VoiceOver cursor on one of these files.
2. Hit command+i.
3. Vo+rightarrow until you find an option that says Open with.  That will 
probably be a pop-up menu.
4. Open that menu and choose the application.
5.  After you're done, vo+rightarrow again and you should hear an option to 
always use this application to open this file type or something like that.
