Is it going to far to set up a web cam with mic so you can watch / hear what 
the kids are doing while studying?

I’ve seen this done with Microsoft  certification tests, where they basically 
video watch you while your sitting the online exam,

This was a few years ago now but it was a serviceable option at the time.

You might wish to look at Chrome Remote Desktop.  It’s an extension you can use 
with Chrome that may work for you.  I’m not sure of how well things will work 
from an observation point of view, as most “remote-in” solutions are not 
particularly screen reader friendly with respect to reading the others screen 
contents.
