Actually, just as with iOS, there is an option to hide apps on apps
purchased from the Mac app store. The option simply is not seen by
Voiceover. This started with Monterey of not earlier.
Get sighted help, go to the Mac app store, select your account and
there under Purchased items, pick any app and to the right of the Open
or Redownload buttons there is a dropdown menu.

Well, perhaps someone else can chime in on this, as I am not
completely sure on this matter. However, the same is true, for
instance, if you make a purchase on Amazon.com <http://Amazon.com>,
return the item for whatever reason, you will certainly see a record of
both the order, as well as the status of the return.
