This is done by going to a file of the file type you would like to associate 
with a particular app, and opening Get Info, using CMD + I.
You can then navigate to the Open With area, where you will find a Pop-Up, that 
will let you choose an application to use with the selected file.
You can then navigate to a checkbox to assign all files of this type to the 
selected application.

You will need to repeat this process for each file type you wish to associate 
with the application.

to the “Extensions” item in Preference Panes but I find creating the 
association rather unintuitive.
