Part of the trick is whether the DVD has been encrypted or not. Most commercial DVDs, such as movies, seem to have this as part of their DRM. Tools like RipIt at least get the data off the DVD and onto your hard drive. I haven't played with ripping out just the audio track from there but I would guess Handbrake could do it.
