Scott, I haven't done this myself, but here are some instructions for removing the preview pane from Anne Robertson, a frequent and helpful contributor to this list.
Navigate to the horizontal splitter above the message body Bring the mouse to the VO cursor (VO command F5) Double click with the physical mouse. I haven't gotten a handle on clicking the mouse so if you need directions on this, let the list know and I'm certain someone else will step up to the plate.
