I have a couple of friends that use the Zoom H2, which can record
straight to MP3. The default I believe is wav files, but that's
adjustable. You may need sighted assistance for the initial setting of
preferences, but after that you should be good to go. A friend of mine
has a document with the menu order written out so he could change the
settings himself if he needed to, which I could get from him if needs
be. I also believe blind cool tech has various podcasts on this recorder.
