Hi, When you delete songs from your local machine, a dialog will appear asking you if you wish to remove it from only the local machine or from iCloud as well. So, essentially, you can play all items that are in iTunes Match from the Cloud if you wish. You'd just be using up data in the streaming process. In most cases, though, the amount of data you'd use up is minimal.
