I have not tried them, but there are list options on the format menu of Text 
Edit. To jusify, hit cmd-shift-left bracket for left, cmd-shift-right bracket 
for right, or cmd-shift-baclskash to center. If you do this before typing your 
text, remember to undo it (such as justifying left to stop centering) or your 
document will look very odd. You can also select text, then hit the command to 
justify or center it. Use vo-t to hear the text attributes to check your work, 
but don't forget to interact with the text first or you will only ever hear the 
attributes of the top-most character. You may also find it useful to hit vo-v, 
left or right arrow to "text attributes", and up or down arrow to "speak", then 
space or enter. Now, every change in attributes will be auto-spoken, which gets 
annoying but is perfect for checking your formatting. Sorry, but I don't know 
about spreadsheets.
