Actually this is not quite correct. The wiimote doesn't support pairing at all (and if it did the Bluetooth specification would require a minimum one digit passkey). The "connect" that the UI allows you to do to paired devices simply calls the "hidd --connect <bdaddr>" command, so you should be able to connect to your wiimote just fine by issuing that command e.g. from the command line.
